Carne Asada Roasted Vegetables

Serves: 4-6 portions
- 2 ounces olive oil
- 1# button mushrooms halved
- 1 red bell peppers rough chopped
- 1 medium zucchini coined ¼ inch
- 2 small yellow squash coined ¼ inch
- 2 carrots rough chopped
- 1 red onion julienned
- 8 ounces (Russian River Fine Foods) Carne Asada sauce
- Toss all vegetables together with the olive oil, salt and pepper and Carne Asada Sauce.
- Preheat oven to 350 degrees.
- Transfer veggies to a sheet pan and roast in oven until fully cooked, about 30-40 minutes.
